My favorite quick easy recipe? Brown some ground beef in a skillet and cook a cup of rice.

Grab a bag of frozen broccoli out of the freezer and a can or two of some diced tomatoes.

Throw in some spices and herbs that you like, and mix them all together until everything is hot and tasty.

Also, don’t forget to add some sliced fruits and vegetables to the plates for your additional benefit.

You can use the prepackaged salads that are sold in all grocery stores. However, fresh is better. It only takes a few minutes to slice up a head of lettuce. Add to this tomato or oranges and serve with a non fat dressing or vinaigrette. You have a very healthy and feeling dinner, but just make sure you stay away from adding croutons or bacon bits. These two toppings defeat the whole purpose behind eating a salad.

If you prefer a more formal type of dinner then chicken is one of a good resource. Thanks to the convenience of society you can buy bags of chicken breast that are ready to be cooked without a moments notice. Just pull the breasts from the freezer, thaw them in the microwave and then prepare them. You can either bake them or broil them, but don’t fry them. The process takes about 30 minutes. While you’re waiting you can do other things. Remember that chicken goes great with salad. Don’t forget to add one of these on the side.

It only takes a few minutes to chop up some apples, oranges, cantaloupes, watermelons, and any other fruits you have on hand to make a filling and highly nutritious dinner. The clean up is also easy.

Another kid favorite at my house. Probably because it reminds them of pizza and what kid doesn’t love pizza. It is an easy one, and one that I make a little different every time the main thing just being to grill pepperoni with the chicken to flavor it up.

Pan grill chicken breasts (left whole today, sometimes they get chopped up), with oregano (1 teaspoonish), minced garlic (1 tsp+), ¼ red bell pepper, ¼ green bell pepper, and a handful of chopped up pepperoni in approximately a tablespoon of butter or olive oil. When the chicken breast are almost finished scoop some of the pepperoni onto the top of the breasts and sprinkle cheese on it (I like parmesan or mozzarella) so it can melt down a bit while the second side browns.

Saute the green pepper, onion and garlic in a skillet with a little bit of olive oil until the pepper is tender. Turn off heat and add chopped tomato and mix together. Beat two eggs in a bowl well. Add 1 teaspoon of water to the eggs and beat them some more to make them fluffy. Let your omelet pan get hot and add some oil to coat the pan. Pour in your eggs and let cook. When the eggs begin to set dump in the vegetables on half of the omelet. Then fold the omelet in half and slide it onto a plate.

Lunch

Soup and salad can make a delicious yeast free lunch. Here’s a lovely recipe for black bean soup and a Mexican style salad.

4 cups chicken, beef or vegetable stock4 cans black beans drained and rinsed1 large onion finely chopped2 cloves garlic minced1/2 teaspoon cumin1/2 teaspoon oregano1/2 teaspoon parsley3 green onions chopped1 large tomato chopped

Put some olive oil in a pot and add onion. Cook onion until the onion is translucent. Add garlic and cook for a minute. Add oregano and cumin to the pot then immediately add beans and stock. Use a potato masher to mash some of the beans. This will thicken the soup. Cover and cook for 10 minutes. Add salt and pepper to taste. When done cooking serve topped with green onion and tomato.

For your salad mix chopped avocado, tomato lettuce and green onion in a bowl and eat with black pepper.

Dinner

Grilled steak and veggies makes a delicious easy meal. Just season a steak with your favorite seasoning and put it on the grill. While you have that grill fired up why not grill your veggies too? I like to grill asparagus and zucchini. Just coat them lightly in olive oil and salt and pepper and put them on the grill.

This is completely winged – I didn’t use a recipe (EEK!!!)

swirl of olive oil
fry two onions & some garlic (to taste)
I added 2 chillis for a little heat
fry until soft
add tomatoes (i used our homegrown tomatoes – mixed with some overripe store bought tomatoes). Add bay leaves & stock – bring to boil – season. Simmer for about 30 minutes and add fresh oregano (i should have used basil as well but we had no basil). I simmered this for about an hour to let the tomatoes breakdown and thicken up.

The rest was pretty simple…
make pasta per packet instructions – add marina mix to pasta sauce (unfortunately the marina mix made my sauce very watery) top with grated parmesan & eat!

Hot, soft and buttery describes my grandma Barb’s easy, homemade yeast rolls. Yep, these rolls are so easy that even I, with my yeast roll challenged self can make them. I grew up on these rolls and knew the holidays where approaching when the phone started ringing off the hook with people calling to ask my grandma to make them a batch.
